Here’s our quick guide to water temperature: Oolong – Boiling water (100 degrees) should be used for these tea leaves. A short infusion time of 3-4 minutes is all that is needed for these leaves in order to avoid stewing which makes the tea taste bitter. Avoid the British practice of using a tea cosy – the Chinese believe that keeping the leaves too warm can lead to them stewing. Green & White Tea – The maximum water to be used with these leaves is 85 degrees. This is because boiling water will kill the tea leaves and flatten the taste. Jasmine Tea – Boil your water in the kettle, but then allow a few minutes for the water to cool slightly before adding to the cup. Enjoy it and share it with family and friends.
